CHEESE MAKING WORKSHOP JANUARY 23, 2016
The Coos County Master Food Preservers, volunteers with the Oregon State University Extension Service, are excited to bring you a special workshop with guest presenter, Gianaclis Caldwell of Pholia Farm. This workshop will cover an introduction to pressed and hard cheeses and aging. While this will not be a hands-on workshop, attendees will be given handouts and be able to watch Gianaclis do actual cheese making demonstrations.
In addition to actively managing their 70 head herd of dairy goats, Gianaclis is the cheesemaker and owner (along with her husband, Vern Caldwell and their daughters Phoebe and Amelia) of Pholia Farm, a licensed dairy located on 24 of the 200 plus acres she grew up on in southern Oregon. Pholia is well known for its artisan, aged raw milk cheeses; classes on small-dairy, goat husbandry, and cheesemaking at all levels; and off-grid, sustainable life-style focus.
Her book, Mastering Artisan Cheesemaking, has received praise from all levels of the cheese world for its text and her photography along with recognition such as a finalist in the 2013 International Culinary Professionals book awards, finalist in the 2012 Book of the Year Awards from ForeWord Reviews Finalist – Reference –Mastering Artisan Cheesemaking, and 2nd place at the 2013 New York Book Show. She often writes and photographs for Culture – The Word on Cheese magazine and other publications. Gianaclis’ new book, Mastering Basic Cheesemaking (New Society Publishing, March 2016) will be available for purchase along with her other books at the workshop.
